Avocado salad with goat cheese is a light and refreshing salad. The recipe is a nocook recipe that shines with summer flavors. This salad is full of beautiful colors and a combination of flavors. It makes this salad is perfect for a luncheon or any occasion. You can make this recipe so many different ways, and as I was searching the different ones, I noticed that just about every ingredient can be substituted to suit your preference for this salad. The avocado, however, is the one exception, seeing as it is an avocado salad, it might be silly to substitute that. Red beets contrast nicely with creamy avocados and goat cheese while fresh red onions and watercress add a crunchy and delightful finish. My husband and I made this to accompany a steak a few nights ago. The textures were wonderful, creamy, crunchy and leafy. The flavor was citrusy and mild. We enjoyed the jicama, which we had not tried before, but now we add it to a few other things we eat. This salad is likely a better recipe to accompany a complex or very spicy dish as the flavors are subtle. We used a baby spring mix that was very nice for flavor and added some purple color to the salad. Also garnished with paprika for more color. This salad is one of the only salads I have ever made and liked! You can leave out the jicama if that is not something you like & it is still perfect!!! Light & tart with wonderful creamy textures from the avocado & goat cheese to complement the lime The Italian in me made me sneak in some grated ParmigianoReggiano to make up for lack of salt in this salad, it was excellent. This wonderful salad can be a great accompaniment to many main courses quiche, steak & garlic mashed potatoes. It is also good all by itself for a relatively healthful and delicious lunch or dinner. I have made this salad several times for friends and family, and everyone loves it.
