Shrimp and Grits recipe:
Two servings cooked grits
Two tablespoons olive oil
Two tablespoons leeks, diced
Two tablespoons onion, diced
Two tablespoons green pepper, diced
20 jumbo shrimp, peeled and deveined
One tablespoon white wine
1 cup heavy cream
green onion, tops, chopped
salt, to taste
black pepper, to taste
Cook grits according to the package directions; set aside and keep warm.
Heat oil in a large skillet over medium-high heat. Add the diced vegetables and sauté until onions are translucent. Add shrimp and sauté for 30-45 seconds, or until the shrimp is pink. Remove from pan and set aside. Deglaze the pan with white wine. Slowly add cream and let reduce until thickened. Season with salt and pepper, to taste.
Divide the cooked grits among two serving plates. Line plate edges with shrimp. Pour the sauce over grits. Garnish with green onion tops.
