Chicken Cacciatore Italian Style

Ingredients: Chicken breasts/thighs, salt and pepper, red bell pepper, olives, onions, tomatoes, garlic, herbs and wine.
Step 1 – First, clean the chicken pieces thoroughly and prepare them for the seasoning. You can use a pinch of salt and freshly ground pepper for this job. Set the chicken aside for a good 15 to 20 minutes.
Step 2 – Heat the olive oil in a large frying pan and sauté the chicken breasts until they turn a golden brown. Set aside the fried chicken and in the same pan, add the chopped bell pepper, onions, garlic, tomatoes and lastly the olives. Once all the ingredients are semi-fried, add the wine and simmer until the wine has been reduced to one-half. Now, it is time to add the sautéed chicken and cook all the ingredients over medium heat until done.
Step 3 – With a pair of tongs transfer the chicken pieces to a serving plate and pour the thick gravy on top of it. You can use herbs like basil and parsley to garnish your chicken.
Tip: Try using chicken stock, which makes for a delicious add-on to the dish (just before adding wine) and for those who like their gravy thick and plenty.
