Great Grilled Carrots
You might think that vegetables indeed don’t always make for an awesome appetizer on your menu. However, cooking them in a creative and delicious way, may make even the finicky eaters into a veggie lover. How about tossing the greens and the reds in the grill and giving a whole new appeal to the look and taste of your good old veggies? Surely your guests won’t be complaining about the food being bland.
Here’s a simple grilled carrot appetizer recipe:
Either grow (I don’t know where that idea came from, but if you have a green thumb, go for it) or get a pound of farm fresh carrots from the vegetable department at the grocery store or better yet, get organic carrots from your local farmer’s market. Make sure they are slightly smaller in size if you are using them as an appetizer, larger if you are using them as a vegetable or side dish. . The carrots are even better if they fit into the palm of your hand, as they are going to be served as yummy finger foods.
Marinate or toss the carrots in lemon juice and herbs of your choice to give the grilled carrots a tangy taste. Salt and a little freshly ground pepper (to your taste) can be sprinkled on the carrots right before you grill the carrots. Do not forget to coat them with olive oil.
Once the initial preparation is done, put the veggies on the grill. If you don’t have one, you can even roast them in the oven.
You will know your appetizer and or vegetable side dish is ready when the carrots look soft with hints of black skin. (some people don’t like the black skin, but personally, that is my favorite part.
It’s a great idea to serve these healthy appetizers in a bright-colored plate with spicy cheese dipping. Bon appetite!
