Root vegetables can be frightening to some people. Mainly because of their look, long leaves sprouting out. Some have skin that is thick and strange. Let’s face it, some of them look like they’re from outer space. Some root vegetables can be intimidating. You may think they have the reputation of tasting earthy. You may even think that some taste bitter. Roots can be amazing for your health. They can be versatile in the kitchen. Plus, absolutely delicious when prepared correctly. I love them grilled.
Roots vegetables have some of the best nutritional uses in the world. Each root contains its benefits for your health. Roots share many of the same characteristics. Yams, beets, parsnips, turnips, yuca, rutabagas, carrots, onions, garlic, celery root, horseradish, daikon, turmeric, ginger, jicama, Jerusalem artichokes, and radishes are all considered roots.
Root vegetables grow underground. They absorb nutrients from the soil. Root vegetables are filled with a concentration of antioxidants. Vitamins such as A, B, C, and iron, and they help in cleaning your body including your digestive system. They are also filled with slow-burning carbohydrates and fiber. This factor, plus the high-octane nutrients and low calories, make roots excellent for people who are trying to lose weight, or simply stay healthy.
