Key Lime pie is one of my faves, so anything with Key Lime in the title intrigues me. These did not disappoint! Lovely, tart lime flavor with the taste of cream cheese frosting makes the cupcake sweet and colorful. I used only one drop of green color. If you choose not to add food coloring, and the cake will still turn out a lovely lime color. The cupcake itself is more like a muffin due to the addition of the gelatin, in consistency than in texture. They do not have a round top and instead have a flat top that may even sink a small amount in the center, but don’t be nervous or worried when you see this. After the cupcakes cool, they get an extra punch of lime from a lime glaze. I love the glaze! I tried using extra lime juice in the glaze and got even more flavor. The last step is getting finished off with a cream cheese frosting that is sweet and balances out the tart flavor. I shared these with friends who all could not stop talking about them. Even my husband, who is against anything key lime, enjoyed them and had more than one! Enjoy this tasty dessert treat in which the key lime juice brings prominent citrus flavor to these cupcakes that are topped with both glaze and frosting. You can even make these into mini cakes for maximum satisfaction. The cupcakes turned out great; cooking time was right on. Top with bread crumbs, or a lime flavored gummy!
